I'm playing through Botanicual again after taking a few months break.  I'm to the part of the musical bowls that splash water to make sprouts grow. How many sprouts are supposed to grow before the prize? I mean doesn't something happen after the maximum number of sprouts have sprung?

I'm assuming you're asking about the achievement. I think there are 11 sprouts altogether? Looking at this YouTube video starting at around 2:45 and ending at around 4:25 mark:
